Corn Mush

Ingredients

  • 1 cup water

  • ¾ cup Roasted White Corn Flour or White Corn Flour

Cornbread with Maple Yogurt

Ingredients

  • 1 cup Roasted White Corn Flour

  • 1 cup all-purpose flour

  • 1 stick of butter

  • ½ cup sugar

  • 2 eggs or egg substitute

  • 1 tablespoons baking powder

  • ¼ teaspoon salt

  • ½ cup vanilla maple yogurt*

  • ½ cup milk


* You can substitute plain yogurt plus 1 teaspoon maple extract.

Cornmeal Cookies

Ingredients

  • 1 ½ cups all-purpose flour, plus more for shaping

  • ½ cup Roasted White Corn Flour

  • ½ teaspoon of salt

  • ¾ cup unsalted butter, room temperature

  • ¾ cup sugar

  • 1 large egg

  • 1 teaspoon vanilla extract *


* For a different flavor instead of vanilla, substitute lemon zest and a ½ teaspoon ground cardamom for the vanilla.

Gluten Free Pumpkin Cornbread

Ingredients

  • 1 cup Roasted White Corn Flour *

  • 1 ⅓ cups brown rice flour *

  • 1 cup tapioca starch/flour *

  • 1 cup light brown sugar

  • 1 cup sugar

  • 1 teaspoon pumpkin pie spice

  • 1 teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ teaspoon kosher salt

  • 1 can (15 oz.) pumpkin puree or 2 cups cooked fresh pumpkin puree

  • 3 eggs or egg substitute

  • ⅓ cup light flavored olive oil

  • ¾ cup semi-sweet chocolate chips, divided


* If you are not in need of a gluten-free recipe, simply substitute a total of 3 cups all-purpose flour for the items marked with an asterisk.
