Wild Rice Pilaf
3 cups Chicken Broth
1 cup wild rice, uncooked
1 cup fresh mushrooms, sliced
1 large onion, diced (approx. 1 1/2 cups)
1 large poblano pepper, diced (approx. 1 cup)
1 Tbsp vegetable oil
1/2 Tsp salt
1/4 Tsp crushed red pepper flakes
Add all ingredients to crockpot and stir. Cover and cook on High 2 1/2 - 3 hours or until rice is soft and liquid is absored. Flavor can be varied with other diced vegetables of your choosing. Serves 4.
