Fresh Strawberry Pie
1 cup Sugar
2 tbsp Cornstarch
2 cups water
1 small package (3 oz.) cherry gelatin
1 pint fresh strawberries, sliced
1 baked 9" pie shell
Whipped cream (optional)
Cook sugar, cornstarch, and water over medium high heat until the mixture comes to a boil. Allow to boil until clear, stirring frequently. Add gelatin and cook 2-3 minutes more. Remove from heat and cool. Place strawberries in pie crust and top with gelatin mixture. Refrigerate several hours or until pie has a firm set. Serve with whipped cream. Serves 6 to 8.
