4 tablespoons vegetable oil
4 cups raw sunchokes (jerusalem artichokes), chopped
1 onion, diced
Salt & Pepper to taste
Heat oil in heavy frying pan. Add sunchokes, onions, and salt. Stir. Cook over medium heat until browned. Reduce heat, cover, and cook until tender (approx. 15 minutes).
