Corn Pancakes
2 c. fresh cream-style corn
1 tsp. baking powder
1/2 teaspoon sugar
1/2 teaspoon salt
dash of pepper
1 tbsp. melted butter
1 tbsp. cream
1 tsp. flour
2 eggs, separated
Mix together all ingredients except the eggs. Beat the egg yolks and add to corn mixture. Beat the egg whites until stiff and fold into corn mixture. Drop desired amount of batter onto lightly greased hot skillet. Cook until brown. Flip and cook other side until brown.
